Ingredients
3 pounds boneless, skinless chicken thighs
1 cup light brown sugar
1 cup soy sauce
⅓ cup bourbon whiskey (or substitute apple juice or chicken broth)
2 tablespoons apple cider vinegar
½ teaspoon ground ginger
1 tablespoon honey
½ teaspoon red chili pepper flakes
4 cloves garlic, minced
3 tablespoons cornstarch
2 tablespoons water
¼ cup chopped green onions
Instructions
1. Place trimmed chicken thighs into slow cooker.
2. In a mixing bowl, whisk together all remaining ingredients except cornstarch, water, and green onions.
3. Pour sauce over chicken in the crock pot.
4. Cover and cook: 4 hours on high or 6 hours on low.
5. Remove chicken and chop roughly.
6. Mix cornstarch and water in a bowl until dissolved.
7. Add slurry to crock pot sauce and whisk.
8. Return chicken to sauce, stir, and let bubble again.
9. Turn off crock pot, garnish with green onions, and serve over rice.
Notes
Best served over white rice.
Garnish with green onions and sesame seeds.
