Description
Tender, juicy Crock Pot chuck roast slow-cooked with steak seasoning, thyme, and rich beef broth. Add potatoes, carrots, and onions for a complete family dinner with smooth, savory gravy.
Ingredients
2 tablespoons oil
3 lb chuck roast, trimmed if needed
2 tablespoons steak seasoning
1 tablespoon dried thyme
1 cup beef broth
⅓ cup water
1 tablespoon cornstarch
Optional: 2 lbs potatoes
Optional: 1 lb carrots
Optional: 1 yellow onion
Optional: additional 1 tablespoon steak seasoning & 1½ tsp thyme for vegetables
Instructions
1. Coat the roast with oil, then rub in steak seasoning and thyme evenly.
2. Sear the roast in a hot skillet for 2–3 minutes per side until browned, then transfer to a slow cooker.
3. Deglaze the skillet with beef broth, scraping up browned bits, and pour the liquid into the slow cooker.
4. If using vegetables, chop them into large chunks, coat with oil and seasoning, and layer over the roast.
5. Cook on low for 7–8 hours or on high for 3½–4 hours until meat is very tender.
6. Mix cornstarch with water to make a slurry, stir it into the slow cooker liquid, cover, and cook for 1 more hour to thicken the gravy.
7. If gravy is too thin, leave lid off and cook on high until thickened.
8. Remove roast, trim excess fat, return meat in chunks to the slow cooker or serve with gravy on a platter.
Notes
Trim roast before seasoning to remove excess fat.
Ensure skillet is hot before searing to create a good crust.
Deglazing skillet adds depth of flavor.
Fully dissolve cornstarch in water to avoid lumps in gravy.
Roast can be seasoned and refrigerated or frozen ahead; thaw fully before cooking and let sit at room temperature before searing.
Store leftovers in airtight container for up to 4 days and reheat gently.
