Description

This Crock Pot French Onion Pot Roast is a cozy, savory dinner with melt-in-your-mouth beef, rich onion gravy, and the comforting aroma of a home-cooked meal. Perfect for busy days or Sunday suppers!


Ingredients

1 oz packet beefy onion soup mix

4 garlic cloves, minced

1/2 tsp dried rosemary

1 large onion, thinly sliced

1 tsp dried thyme

1 tsp black pepper

2 cans (10.5 oz each) condensed French onion soup

2 tbsp vegetable oil

1/2 cup unsalted butter, thinly sliced

1 tsp kosher salt

1 chuck roast (2 to 3 lb), at room temperature

1/4 cup water

2 tbsp cornstarch (for slurry)

Chopped parsley for garnish


Instructions

1. Combine sliced onion, minced garlic, soup mix, thyme, and rosemary in a bowl.

2. Lightly oil the slow cooker and add half the onion mixture and one can of soup.

3. Pat the chuck roast dry, season with salt and pepper, and sear in hot oil until browned on all sides.

4. Place roast over the onions in the slow cooker.

5. Top with remaining onion mix, second soup can, and butter slices.

6. Cover and cook on low for 6–8 hours or high for 4–6 hours, until very tender.

7. Remove roast and shred with two forks.

8. Simmer cooking liquid in a pot, stir in cornstarch slurry, and cook until thick.

9. Return shredded meat to the slow cooker and coat with gravy.

10. Keep warm and garnish with parsley before serving.

Notes

Searing the meat adds deep flavor and color.

Cook on low for the most tender texture.

Avoid lifting the lid during cooking to retain heat.

Store leftovers up to 4 days in the fridge or 3 months in the freezer.

Reheat gently with broth or on medium microwave power.
