Description

A cozy, creamy slow cooker dinner featuring tender chicken, buttery potatoes, and a garlic parmesan sauce that melts into every bite.


Ingredients

1.5 lb boneless skinless chicken breasts or thighs, cubed

1.5 lb Yukon gold potatoes, cubed

1 tsp salt

1 tsp garlic powder

1 tsp Italian seasoning

3 cloves garlic, minced

3/4 cup garlic parmesan sauce (store-bought or homemade)

1 tbsp olive oil

1 cup shredded mozzarella or parmesan cheese

Optional: chopped parsley for garnish


Instructions

1. Spray crockpot insert with nonstick spray.

2. Add cubed potatoes, season with salt and garlic powder. Stir in minced garlic.

3. Layer cubed chicken on top of potatoes.

4. Sprinkle with Italian seasoning and pour garlic parmesan sauce evenly over everything.

5. Cover and cook on LOW for 6 hours.

6. Gently stir and sprinkle shredded cheese on top.

7. Cover again for 10 minutes until cheese melts.

8. Serve warm, garnished with parsley if desired.

Notes

You can use thighs for richer flavor.

Block cheese melts better than pre-shredded.

Add quick-cooking vegetables like green beans in the last hour.

Pairs perfectly with crusty bread or a cucumber tomato salad.
