Crockpot Pot Roast with tender beef, hearty vegetables, and rich savory flavor. This easy slow cooker meal cooks low and slow for a comforting, hands-off dinner perfect for busy days.
Ingredients
3 lb beef chuck roast
2 tbsp olive oil divided
Salt and black pepper to taste
1 yellow onion sliced
4 cloves garlic minced
2 cups beef broth
1 tbsp Worcestershire sauce
2 sprigs fresh thyme
2 sprigs fresh rosemary
1.5 lb Yukon gold potatoes whole
4 carrots cut into chunks
2 tbsp cornstarch mixed with broth optional
Fresh parsley for garnish
Instructions
1. Pat beef dry and season with salt and pepper
2. Heat oil and sear roast on all sides until browned
3. Transfer roast to slow cooker
4. Cook onions in same pan then add garlic
5. Place onion and garlic mixture over roast
6. Deglaze pan with broth Worcestershire and herbs scraping browned bits
7. Pour liquid over roast
8. Arrange potatoes and carrots on top and season lightly
9. Cover and cook on low for 8 to 9 hours
10. Remove roast and vegetables then shred beef
11. Simmer liquid with cornstarch slurry if making gravy
12. Serve with parsley garnish
Notes
Searing the meat adds deeper flavor and better texture
Use Yukon gold potatoes to prevent mushy texture
Cut carrots thick so they hold shape
Cook on low for best tenderness
Add extra broth if gravy becomes too thick
Fresh herbs give better flavor than dried
