Description

Thick, buttery sugar cookies topped with a gooey pecan pie filling — a cozy, crave-worthy Crumbl copycat made for holiday dessert trays.


Ingredients

**For the Sugar Cookie Base**

1/2 cup unsalted butter, softened

1/3 cup vegetable or canola oil

1/2 cup granulated sugar

1/4 cup powdered sugar

1 large egg, room temperature

1 tsp vanilla extract

2 1/3 cups all-purpose flour

1/4 tsp salt

1 tsp baking powder

**For the Pecan Pie Filling**

5 tbsp butter

2/3 cup brown sugar

1 1/4 cups chopped pecans

1 tsp vanilla extract

1/3 cup heavy cream

1/4 tsp ground cinnamon

Pinch of ground nutmeg

Pinch of salt


Instructions

1. Preheat oven to 350°F and line a baking sheet with parchment paper.

2. Cream the butter, oil, granulated sugar, and powdered sugar until smooth.

3. Add egg and vanilla extract; mix until well combined.

4. Mix in flour, baking powder, and salt until just combined.

5. Scoop 9 large dough balls. Flatten slightly and press the center using a 1/4 cup measure.

6. Bake for 8–9 minutes. Edges should be set, but centers still soft.

7. Let cookies cool completely on the baking sheet.

8. Meanwhile, make the filling: Melt butter in a saucepan over medium heat.

9. Add brown sugar and chopped pecans. Stir until mixture bubbles for 1–2 minutes.

10. Remove from heat. Stir in vanilla, cream, cinnamon, nutmeg, and salt.

11. Let the filling cool 5–10 minutes to thicken.

12. Spoon warm filling into the center of each cooled cookie.

13. Allow cookies to set for 20–30 minutes before serving.

Notes

These cookies are best served slightly warm. Microwave 10–15 seconds for the fresh-baked feel.

Store at room temperature for up to 4 days, or freeze up to 2 months.

For smaller cookies, divide dough into 16 and bake for 7 minutes.

You can make the cookie base a day in advance and fill the cookies before serving.
