Soft, fudgy, and full of rich cocoa flavor, these delicious red velvet cake mix brownies are made with just four ingredients and bake up beautifully in under 40 minutes.
Ingredients
1 box (15.25 oz) red velvet cake mix
2 large eggs (room temperature)
1/2 cup melted coconut oil (or vegetable oil or melted butter)
3/4 cup white chocolate chips (optional)
Instructions
1. Preheat oven to 350°F (175°C) and line an 8×8 or 9×9-inch pan with parchment paper.
2. In a large bowl, combine cake mix, eggs, and oil; mix until just combined and thick.
3. Fold in white chocolate chips if using.
4. Spread batter evenly into the prepared pan and press extra chips on top if desired.
5. Bake for 18–22 minutes until a toothpick comes out with moist crumbs, not wet batter.
6. Cool completely in the pan before lifting out with parchment and slicing.
Notes
Do not overmix; stir only until ingredients are combined to keep brownies soft and fudgy.
Let melted oil cool slightly before mixing to avoid cooking the eggs.
Line the pan with parchment for clean removal and edges.
