Description

Soft chocolate cookies topped with crunchy, chocolate-coated chow mein noodles and colorful candy eggs. These Easter Birds Nest Cookies are fun, adorable, and perfect for spring gatherings or gifting.


Ingredients

1 cup all-purpose flour (125 g)

1/4 cup cocoa powder (25 g)

1/4 teaspoon salt

1/2 cup unsalted butter, softened (115 g)

1/4 cup granulated sugar (50 g)

1/4 cup brown sugar (50 g)

1 teaspoon vanilla extract

1 large egg

1 cup chow mein noodles (120 g)

1 1/2 cups milk chocolate chips (250 g)

1 tablespoon coconut oil or vegetable shortening (optional)

1/2 cup milk or dark chocolate chips for filling (100 g)

1 teaspoon coconut oil or butter for filling (optional)

Pastel candy eggs (2–4 per cookie)

Optional colorful sprinkles or nonpareils


Instructions

1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. Whisk together flour, cocoa powder, and salt in a small bowl.

3. Cream butter with both sugars until light and fluffy, then add vanilla and egg.

4. Add dry ingredients to wet mixture and mix until dough forms.

5. Scoop 1-tablespoon portions, flatten into 2-inch disks, and place on prepared baking sheet.

6. Bake for 8–10 minutes and cool completely.

7. Melt 1½ cups chocolate chips in 30-second microwave intervals, stirring in between.

8. Add coconut oil if needed, then stir in chow mein noodles until evenly coated.

9. Spoon 2 tablespoons of coated noodles onto each cookie, shaping them into nests with a hollow center.

10. Let sit at room temperature for about 15 minutes to set.

11. Melt 1/2 cup chocolate chips with coconut oil or butter and fill nest centers halfway.

12. Refrigerate for 10–15 minutes until firm.

13. Place 2–4 pastel candy eggs into each nest and decorate with sprinkles if desired.

Notes

Coconut oil helps melt chocolate smoothly but can be omitted.

Chill cookies briefly to speed up chocolate setting.

Store in an airtight container at room temperature for up to 3 days.

You can freeze cookie bases and assemble nests later.
