Description

Easter Poke Cake is a colorful pastel marbled vanilla cake filled with creamy vanilla pudding and topped with fluffy whipped cream, coconut, and festive Easter candy. This easy make ahead dessert is perfect for spring gatherings and Easter celebrations.


Ingredients

15.25 ounce white cake mix

3 egg whites

½ cup vegetable oil

½ cup Greek yogurt

¾ cup whole milk

Pink gel food coloring

Yellow gel food coloring

Blue gel food coloring

5.1 ounce instant vanilla pudding mix

2¾ cups whole milk (for pudding)

2 cups heavy cream

3 tablespoons granulated sugar

1 cup sweetened shredded coconut

Easter sprinkles or candy eggs for topping


Instructions

1. Preheat the oven and grease a 9×13 inch baking dish.

2. In a large bowl mix the cake mix, egg whites, vegetable oil, Greek yogurt, and milk until the batter is smooth.

3. Divide the batter into separate bowls and tint each portion with pastel food coloring.

4. Add spoonfuls of the colored batter into the prepared baking dish and gently swirl to create a marbled effect.

5. Bake until a toothpick inserted in the center comes out clean.

6. Allow the cake to cool slightly then use the handle of a wooden spoon to poke holes across the surface.

7. Whisk the instant vanilla pudding mix with milk until thickened.

8. Spread or pour the pudding over the cake so it fills the holes.

9. Refrigerate the cake so the pudding sets.

10. Whip heavy cream with sugar until light and fluffy.

11. Spread the whipped cream evenly over the chilled cake.

12. Top with shredded coconut and decorate with Easter sprinkles or candy eggs before serving.
