A delicious and moist apple coffee cake with a buttery cinnamon streusel topping. Perfect for breakfast, brunch, or dessert!

- 2–3 medium apples, peeled and sliced
- 1 teaspoon cinnamon
- 2 tablespoons sugar
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup softened butter
- 1 cup sugar (mix of white and brown sugar recommended)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 3/4 cup all-purpose flour (for streusel)
- 1/2 cup brown sugar
- 1 teaspoon cinnamon (for streusel)
- 6 tablespoons cold butter
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- In a small bowl, toss sliced apples with cinnamon and sugar. Set aside.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, beat butter and sugar until light and fluffy.
- Add eggs one at a time, then mix in vanilla extract.
- Alternate adding dry ingredients and buttermilk, mixing just until combined.
- To make streusel, mix flour, brown sugar, and cinnamon in a bowl.
- Cut in cold butter until mixture resembles coarse crumbs.
- Pour half the batter into the prepared pan and spread evenly.
- Layer cinnamon-sugar apples over the batter.
- Spread remaining batter gently over apples.
- Sprinkle streusel topping evenly over the batter.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Let cool for 10 minutes before serving.
Notes
For extra crunch, add chopped pecans or walnuts to the streusel topping.
