  • 23 medium apples, peeled and sliced
  • 1 teaspoon cinnamon
  • 2 tablespoons sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup softened butter
  • 1 cup sugar (mix of white and brown sugar recommended)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 3/4 cup all-purpose flour (for streusel)
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon (for streusel)
  • 6 tablespoons cold butter

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a small bowl, toss sliced apples with cinnamon and sugar. Set aside.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In a large bowl, beat butter and sugar until light and fluffy.
  5. Add eggs one at a time, then mix in vanilla extract.
  6. Alternate adding dry ingredients and buttermilk, mixing just until combined.
  7. To make streusel, mix flour, brown sugar, and cinnamon in a bowl.
  8. Cut in cold butter until mixture resembles coarse crumbs.
  9. Pour half the batter into the prepared pan and spread evenly.
  10. Layer cinnamon-sugar apples over the batter.
  11. Spread remaining batter gently over apples.
  12. Sprinkle streusel topping evenly over the batter.
  13. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  14. Let cool for 10 minutes before serving.

Notes

For extra crunch, add chopped pecans or walnuts to the streusel topping.
