Description
A soft, naturally sweet, flourless oatmeal apple cake made with wholesome ingredients and ready in just 35 minutes — perfect for healthy breakfasts or snacks.
Ingredients
1 cup oats
1 large apple (peeled and chopped)
3 tbsp honey*
1 tsp vanilla
1 tsp cinnamon
1/2 tsp baking soda
1/2 tsp baking powder
3 tbsp yogurt
2 eggs
1 tbsp butter or coconut oil
Instructions
1. Preheat oven to 180°C / 350°F.
2. Put all ingredients except 1/4 of the oats into a blender or bowl (for hand blender) and process until smooth.
3. Mix in the remaining oats.
4. Line a small baking pan with parchment paper, pour mixture in.
5. Bake 20–30 minutes or until a toothpick comes out clean.
6. Cool completely, slice, and refrigerate in an airtight container for at least 1 hour.
Notes
*Honey can be substituted with 3–4 tbsp dark brown sugar; taste and adjust sweetness.
