Description

Easy Cherry Cobbler Muffins are soft vanilla muffins filled with sweet cherries and topped with a buttery cinnamon streusel. They combine the cozy flavor of cherry cobbler with the fluffy texture of a homemade bakery style muffin.


Ingredients

2 cups all purpose flour

1 tablespoon additional flour for coating cherries

½ teaspoon salt

2 teaspoons baking powder

2 large eggs

¼ cup melted salted butter cooled

½ cup granulated sugar

1 teaspoon vanilla extract

¾ cup milk

1 can (21 oz) cherry pie filling divided

¼ cup cold salted butter cubed for streusel

½ cup all purpose flour for streusel

1 teaspoon baking powder for streusel

¼ cup granulated sugar for streusel

¼ teaspoon ground cinnamon

1 tablespoon milk or heavy cream for streusel


Instructions

1. Preheat oven to 375°F (190°C) and grease or line a 12 cup muffin pan.

2. In a bowl mix flour, salt, and baking powder.

3. In another bowl whisk eggs, melted butter, sugar, vanilla extract, and milk until smooth.

4. Add the dry ingredients to the wet ingredients and stir gently until just combined.

5. Drain about half of the cherry pie filling and rinse the cherries to remove excess syrup. Let them dry.

6. Toss the drained cherries with the extra tablespoon of flour.

7. Fold the cherries into the muffin batter evenly.

8. Divide the batter among the 12 muffin cups.

9. Top each muffin with two or three cherries and a small spoonful of the remaining cherry filling.

10. Prepare the streusel by mixing cold butter, flour, baking powder, sugar, cinnamon, and milk until crumbly.

11. Sprinkle the streusel evenly over each muffin.

12. Bake for about 25 minutes or until a toothpick inserted in the center comes out clean.

13. Allow muffins to cool briefly in the pan before transferring to a rack and serving.

Notes

Avoid overmixing the batter to keep muffins light and fluffy.

Coating cherries with flour helps prevent them from sinking in the batter.

Rinsing and draining cherries removes excess syrup so the muffins do not become overly wet.

Frozen cherries can be used if thawed and well drained.

Other pie fillings such as blueberry, peach, raspberry, or strawberry can be substituted.

Chopped nuts like pecans or walnuts can be added for extra texture.
