Description

Easy Cherry Vanilla Jam is a sweet homemade spread made with juicy cherries, warm vanilla, and bright lemon juice. This quick recipe uses low-sugar pectin so the jam thickens beautifully while keeping the natural cherry flavor fresh and vibrant.


Ingredients

Scale

5 cups sweet dark cherries (about 2.5 lb), pitted and chopped

2 1/2 cups granulated white sugar

3 tablespoons lemon juice

1 vanilla bean with seeds scraped, or 3 teaspoons vanilla extract

1 packet low-sugar pectin (about 49 g)


Instructions

1. Pit and chop the cherries, keeping any juice released, and place them in a large wide pot.

2. Add lemon juice, vanilla bean seeds or vanilla extract, pectin, and about 1/4 cup of the sugar to the cherries and mix well.

3. Heat the mixture over high heat while stirring constantly until it reaches a strong rolling boil that does not stop when stirred.

4. Add the remaining sugar and continue stirring until the mixture returns to a full rolling boil.

5. Once the boil is steady, cook for about 1 minute while stirring constantly.

6. Remove the jam from heat.

7. If not canning, allow the jam to cool slightly, transfer it to containers, cool completely, then seal and refrigerate.

Notes

Fresh or frozen cherries can be used. If frozen, thaw first and discard excess liquid before chopping.

If substituting regular pectin instead of low-sugar pectin, double the sugar and add it all after the first boil instead of mixing some with the pectin.

To freeze the jam instead of canning, shorten the final boil to about 45 seconds, cool completely in freezer-safe containers, and freeze for up to 1 year.

Jam keeps in the refrigerator for about 1 month after opening.

Leave about 1/4 inch headspace when filling jars for canning and process jars in boiling water for about 10 minutes.
