Description
This Easy Chicken Tortilla Soup is creamy, hearty, and full of Tex-Mex flavor. Made in one pot and ready in about 30 minutes, it’s a comforting weeknight meal that balances smoky spice, creamy texture, and customizable toppings like tortilla strips, avocado, and cheese.
Ingredients
1 tbsp olive oil
1/2 medium yellow onion, chopped
1 can (28 oz) crushed tomatoes
1 can (10 oz) diced tomatoes with green chilies, undrained
1 cup chicken broth
1 tsp garlic powder
1 tsp smoked paprika
1/2 tbsp chili powder
1 can (12 oz) corn, drained
1 can (14 oz) black beans, rinsed and drained
1 cup heavy cream or whipping cream
2 cups cooked chicken, shredded or chopped
Salt and pepper to taste
Optional toppings: tortilla strips, avocado, sour cream, shredded Tex-Mex cheese
Instructions
1. Heat olive oil in a large soup pot over medium-high heat. Add chopped onion and cook until soft and lightly golden, about 5–7 minutes.
2. Add crushed tomatoes, diced tomatoes with green chilies, chicken broth, garlic powder, smoked paprika, chili powder, corn, and black beans. Stir to combine and bring to a boil.
3. Reduce heat to a gentle simmer. Cover the pot partially with the lid and simmer for 5 minutes to blend the flavors.
4. While simmering, prepare toppings such as slicing avocado, measuring sour cream, shredding cheese, and readying tortilla strips.
5. Stir in heavy cream and cooked chicken. Keep on low heat for 3–5 minutes until heated through and creamy. Adjust salt and pepper to taste.
6. Serve hot and top with desired garnishes.
