Ingredients
2 1/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 cup softened butter
1/2 cup sugar
1/2 cup packed brown sugar
2 large eggs, room temperature
1 tbsp vanilla extract
2 cups butterscotch chips
Instructions
1. Preheat oven to 350°F (175°C).
2. In a large bowl, cream together butter, both sugars, and vanilla until smooth and fluffy.
3. Add eggs one at a time, mixing well after each addition.
4. In another bowl, whisk flour, baking soda, and salt.
5. Gradually add dry mixture to wet ingredients, stirring gently.
6. Fold in butterscotch chips until evenly distributed.
7. Scoop 1 tablespoon of dough per cookie onto a baking sheet, spacing 2 inches apart.
8. Bake 8–10 minutes until edges are golden and centers remain soft.
9. Let cookies rest on sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
Use only softened (not melted) butter to prevent spreading.
Chill dough for 30 minutes for thicker cookies.
Remove cookies when edges are just golden; centers will firm as they cool.
Store in an airtight container with a slice of bread to keep cookies soft.
