Ingredients
2 teaspoons extra virgin olive oil
1 small onion, chopped
8 ounces white button mushrooms, sliced
2 cloves garlic, minced
1½ pounds boneless, skinless chicken breasts, cut into 1 inch strips
¾ teaspoon kosher salt
½ teaspoon black pepper
4 ounces cream cheese (regular or reduced fat)
¼ cup low sodium chicken broth
¼ to ½ cup shredded mozzarella cheese
Cooked rice for serving, optional
Fresh chopped parsley for garnish, optional
Instructions
1. Heat olive oil in a large skillet over medium heat. Add onion and mushrooms and cook until softened. Stir in garlic and cook briefly until fragrant.
2. Season chicken with salt and pepper. Increase heat slightly and add chicken to the skillet. Cook until browned on all sides.
3. Add cream cheese and chicken broth. Stir continuously until the cream cheese melts into a smooth, creamy sauce that coats the chicken.
4. Sprinkle mozzarella over the top. Cover the skillet, reduce heat, and cook until the chicken is fully cooked and the cheese is melted.
5. Taste and adjust seasoning if needed. Serve hot over rice if desired and garnish with fresh parsley.
Notes
Mushrooms can be omitted if preferred.
Regular or reduced fat cream cheese works best. Fat free versions may affect texture.
Serve with rice, quinoa, mashed potatoes, polenta, or steamed vegetables.
Store leftovers in an airtight container in the refrigerator for up to 4 to 5 days and reheat gently.
Freezing is not recommended because the cream based sauce may separate after thawing.
