Description
Easy Crockpot Marry Me Chicken is a creamy slow cooker chicken dinner made with tender chicken breasts simmered in a rich garlic Parmesan sauce with sun-dried tomatoes and Italian herbs. This comforting crockpot meal is simple to prepare and perfect for busy weeknights or cozy family dinners.
Ingredients
4 boneless skinless chicken breasts (about 1¼ pounds)
2 tablespoons olive oil
1 cup low-sodium chicken broth
1 tablespoon cornstarch
3 garlic cloves, minced
1 teaspoon Italian seasoning
½ teaspoon paprika
½ teaspoon onion powder
½ teaspoon salt
½ teaspoon black pepper
½ cup sun-dried tomatoes, chopped
¾ cup heavy cream
½ cup grated Parmesan cheese
Cooked pasta or spaghetti squash for serving (optional)
Fresh basil for garnish (optional)
Extra Parmesan cheese for serving (optional)
Instructions
1. Heat olive oil in a skillet over medium-high heat and sear the chicken breasts for 2 to 3 minutes on each side until lightly browned but not fully cooked.
2. In a slow cooker whisk together the chicken broth and cornstarch until smooth.
3. Stir in minced garlic, Italian seasoning, paprika, onion powder, salt, and black pepper.
4. Place the browned chicken breasts into the slow cooker and coat them with the broth mixture.
5. Add the chopped sun-dried tomatoes on top of the chicken.
6. Cover and cook on low for 3 to 4 hours until the chicken becomes tender and fully cooked.
7. Remove the chicken from the slow cooker temporarily.
8. Stir the heavy cream and grated Parmesan cheese into the sauce until smooth and creamy.
9. Return the chicken to the slow cooker and spoon the creamy sauce over the top.
10. Serve warm over pasta, rice, mashed potatoes, or spaghetti squash with fresh basil and extra Parmesan if desired.
Notes
Chicken thighs can be used instead of chicken breasts for a richer and more tender result.
Half-and-half may replace heavy cream for a lighter sauce.
Dairy-free cream alternatives can be used if needed though the texture may vary slightly.
This creamy chicken pairs well with pasta, rice, mashed potatoes, or spaghetti squash.
Store leftovers in an airtight container in the refrigerator for up to 4 days.
Reheat gently on the stove or in the microwave with a splash of broth or cream if the sauce thickens.
Freezing is not recommended because the cream sauce may separate after thawing.
