- 3 firm ripe peaches – sliced in halves or thick wedges
- 4 cups mixed greens – such as baby spinach, arugula, or kale
- 1 cup cherry tomatoes – halved
- 1 large ball burrata – torn into pieces
- 1 tbsp olive oil – for brushing peaches
- Salt and black pepper – to season fruit
- 2 tbsp chopped pistachios
- 1 tbsp balsamic glaze
- Fresh basil or mint leaves – for garnish
- 1 tsp honey – to drizzle on grilled peaches
- 3 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 tbsp honey
- Juice and zest of 1 lemon
- 1 garlic clove, minced
- 1 tsp each of chopped fresh basil, dill, and oregano
Instructions
- Preheat grill or grill pan. Halve peaches and remove pits.
- Brush cut sides of peaches with olive oil and season with salt and pepper.
- Grill peaches cut-side down for 2–3 minutes until grill marks appear, then flip and grill for 1–2 more minutes. Remove and drizzle with honey.
- Whisk vinaigrette ingredients together in a bowl or jar. Season with salt and pepper.
- Arrange mixed greens on a serving platter. Add grilled peaches, cherry tomatoes, and torn burrata.
- Sprinkle pistachios and drizzle with vinaigrette and balsamic glaze.
- Garnish with fresh herbs and a final crack of black pepper.
Notes
Choose firm, ripe peaches to avoid them falling apart on the grill. You can grill the peaches and prepare the vinaigrette ahead of time. Assemble just before serving for best texture.
