Description

Buttery crumbs, sweet juicy peaches, and a tender base make this easy Italian peach crumb cake a go-to dessert year-round.


Ingredients

Scale

to cups all-purpose flour

½ cup sugar

2 tsp baking powder

1 pinch salt

½ cup very cold butter

1 egg

2½ cups sliced peaches (fresh, canned well-drained, or frozen)

1½ tbsp sugar


Instructions

1. Preheat oven to 350°F (180°C). Prepare an 8″ cake pan, ideally springform.

2. Mix peaches with sugar in a medium bowl. Set aside.

3. In a large bowl, whisk flour, sugar, baking powder, and salt.

4. Cut in butter until crumbly. Add egg and mix until still crumbly.

5. Press ½ to ⅔ of crumb mixture into the pan.

6. Spread peach mixture evenly on top.

7. Sprinkle with remaining crumbs.

8. Bake 30–40 minutes until lightly golden.

9. Cool slightly before serving. Optional: top with vanilla ice cream.

Notes

Freeze butter for 15–20 minutes before grating for easier mixing.

If crumb mixture seems dry, add 1–2 tbsp extra butter.

Drain canned peaches well to prevent soggy crust.

For frozen peaches, thaw first or bake 10 minutes longer and cover with foil to prevent over-browning.
