Creamy, colorful, and quick, these Easy Mini Birthday Cheesecakes are perfect for parties or small celebrations. Each mini cheesecake has a buttery vanilla wafer crust, smooth cream cheese filling, and fluffy whipped cream topping finished with sprinkles.
Ingredients
1 cup finely crushed vanilla wafer cookies
3 tablespoons melted unsalted butter for crust
16 oz full-fat cream cheese, room temperature
1/3 cup white sugar
1/2 cup sour cream
1 tablespoon vanilla extract
2 large eggs, room temperature
1/3 cup rainbow sprinkles folded into batter
1 cup cold heavy whipping cream for topping
1/2 cup confectioners’ sugar for topping
Extra sprinkles for garnish
Instructions
1. Preheat oven to 350°F and line a cupcake pan with paper liners.
2. Combine crushed vanilla wafers and melted butter, then press about a tablespoon into each liner to form the crust.
3. Beat cream cheese and sugar until smooth, then mix in sour cream and vanilla extract.
4. Add eggs one at a time, mixing just until combined. Gently fold in sprinkles.
5. Fill liners nearly to the top with batter and add extra sprinkles on top.
6. Bake 15–18 minutes until centers are slightly jiggly. Cool completely, then chill at least 2 hours.
7. Whip heavy cream with confectioners’ sugar until stiff peaks form.
8. Before serving, top each cheesecake with whipped cream and more sprinkles.
Notes
Use room temperature dairy ingredients to ensure a smooth batter.
Avoid chocolate sprinkles inside the batter since they may bleed.
Add whipped cream and decorations just before serving for best texture.
Full-fat cream cheese provides the best flavor and structure.
