Description
Hearty, cheesy, and full of comforting flavor, this easy sausage and egg casserole is the perfect make-ahead breakfast for busy mornings or lazy weekends.
Ingredients
8–10 eggs, scrambled with a fork
1 cup shredded cheddar cheese (sharp preferred)
1 pound sausage, browned and drained
2 slices of bread, cut into cubes and slightly dried
2 cups milk (2% used; skim or half-and-half also work)
1 teaspoon salt (optional)
Pepper to taste (optional)
Instructions
1. Preheat oven to 350°F and lightly grease a 9×13 inch pan.
2. Crack eggs into a bowl and scramble with a fork or whisk.
3. Stir in milk.
4. Add cheese, sausage, bread cubes, and salt (if using) to the bowl and stir well.
5. Pour mixture into the greased baking dish.
6. Bake for 30–45 minutes until the center is set and top is lightly browned.
Notes
Bread should be slightly dried or toasted; smaller cubes mix better.
Use original, maple, or spicy sausage. Mix with bacon if desired.
Replace milk with half-and-half for extra richness.
More eggs = thicker casserole. Adjust bake time accordingly.
Can prep up to 24 hours ahead or freeze after baking.
To freeze: cool completely, cut, wrap in paper towel, and store in freezer bags.
Reheat in microwave or oven. Great for breakfast sandwiches too!
Garnish with green onions or chives if desired.
