Description
Easy Spinach Cottage Cheese Flagels are soft flat bagels packed with protein from cottage cheese and mozzarella. They bake in about 25 minutes and make a quick healthy breakfast with a soft interior and lightly golden exterior.
Ingredients
1 cup (210 g) cottage cheese
1 cup plus 2 tablespoons (125 g) all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon olive oil
2 oz (about 56 g) baby spinach, finely chopped
1/2 cup (56 g) shredded mozzarella cheese
1 egg, beaten for egg wash
Instructions
1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. Blend the cottage cheese until smooth and creamy.
3. In a mixing bowl combine the blended cottage cheese, flour, baking powder, salt, olive oil, chopped spinach, and mozzarella cheese. Stir until a dough forms.
4. Shape the dough into a log about 6 inches long and divide it into 6 equal portions.
5. Flatten each portion into a round and create a hole in the center to form a bagel-like shape.
6. Place the shaped dough on the prepared baking sheet and brush the tops with the beaten egg.
7. Bake for about 22–25 minutes until the tops turn golden.
8. Remove from the oven and allow the flagels to cool on a wire rack before serving.
Notes
Store leftovers in an airtight container in the refrigerator.
Gluten-free all-purpose flour can be used as a substitute if needed.
If the dough feels too sticky or wet, add small amounts of flour until it becomes easier to handle.
Greek yogurt can be used instead of cottage cheese as an alternative ingredient.
