Description

Easy Strawberry Pound Cake is a moist, sweet, fruity loaf cake made with Greek yogurt, diced strawberries, and a simple strawberry glaze. It is easy to make, perfect for spring and summer, and great for brunch, dessert, or an afternoon treat.

Ingredients

Scale

1 1/2 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

1 cup plain Greek yogurt

1 cup sugar

3 large eggs

1 1/2 teaspoons almond extract

1/2 cup vegetable oil

1 cup diced strawberries

1/2 cup smashed strawberries

2 cups powdered sugar

Instructions

1. Preheat oven to 350°F and grease an 8-inch or 9-inch loaf pan.

2. Combine flour, baking powder, and salt in one bowl.

3. In a larger bowl, mix Greek yogurt, sugar, eggs, almond extract, and oil.

4. Gently stir the dry ingredients into the wet mixture until just combined.

5. Fold in the diced strawberries.

6. Transfer the batter to the prepared loaf pan.

7. Bake for about 50 minutes, until the center is set.

8. Cool the cake in the pan for 10 minutes.

9. Remove the cake from the pan and let it cool completely on a wire rack.

10. Mix the smashed strawberries with powdered sugar to make the glaze.

11. Pour the glaze over the cooled cake.

12. Let the glaze set, then slice and serve.

Notes

Use plain Greek yogurt for a very moist texture.

Almond extract pairs well with strawberries, but vanilla or lemon can be used instead.

Do not overmix once the dry ingredients are added.

Cool the cake fully before glazing so the topping sets properly.

Store leftovers at room temperature rather than in the refrigerator, since chilling can make the cake firmer.

Frozen strawberries have been used successfully by readers.

A small amount of lemon zest or up to 1 tablespoon lemon juice can be added for variation.
