Description

Soft, buttery sugar cookies with crisp edges and a smooth, shiny icing — this easy sugar cookie recipe with icing is perfect for Christmas or any holiday. The dough chills beautifully and the icing dries glossy for decorating or gifting.

Ingredients

Scale

1 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1½ teaspoons vanilla extract

2½ cups all-purpose flour

¾ teaspoon baking powder

¾ teaspoon salt

Frosting Ingredients:

3 cups powdered sugar, sifted

34 tablespoons milk

2 tablespoons light corn syrup

½ teaspoon vanilla extract

Optional: gel food coloring, sprinkles, candies for decorating

Instructions

1. Beat butter and sugar until creamy.

2. Add egg and vanilla, mix well.

3. In another bowl, whisk together flour, baking powder, and salt.

4. Gradually combine dry ingredients with wet until a smooth dough forms.

5. Divide dough in half, wrap in plastic wrap, and chill for 2–3 hours.

6. Preheat oven to 350°F (175°C).

7. Roll dough to ⅛ inch for crisp cookies or ¼ inch for soft cookies on a floured surface.

8. Cut out shapes, place on parchment-lined baking sheet, and bake for 8–10 minutes until edges are just turning golden.

9. Cool completely before decorating.

10. To make icing, mix powdered sugar, 2 tablespoons milk, corn syrup, and vanilla.

11. Adjust consistency by adding more milk (to thin) or more sugar (to thicken).

12. Add food coloring if desired.

13. Pipe or spread onto cooled cookies.

14. Allow frosting to harden for several hours before stacking or storing.

Notes

If dough is sticky after chilling, dust with more flour or chill longer.

If it cracks while rolling, let it rest at room temperature for 10–15 minutes.

For icing, aim for a consistency that briefly holds its shape before sinking back into the bowl.

Store unused icing in an airtight container with plastic wrap directly on the surface to prevent crusting. Stir before reuse.
