Ingredients
- 1 ½ cups all-purpose flour
- 1 ½ tsp baking powder
- ¼ tsp salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 3 large egg whites
- ½ cup whole-milk Greek yogurt
- ¼ cup whole milk
- 1 tsp vanilla extract
- ¼ tsp green gel food coloring (natural or artificial)
- 1 packet unsweetened watermelon Kool-Aid powder (or natural watermelon flavoring)
- ½ cup unsalted butter, softened (for frosting)
- 2 cups powdered sugar
- 1 packet unsweetened watermelon Kool-Aid powder (for frosting)
- Pink gel food coloring
- 1–2 tbsp whole milk (optional, for frosting consistency)
- Optional: mini chocolate chips (for “watermelon seeds” decoration)
Instructions
- In a medium bowl, whisk together the flour, baking powder, salt, and watermelon Kool-Aid powder.
- Cream the softened butter and sugar together until light and fluffy.
- Add egg whites one at a time, beating well after each addition.
- Mix in Greek yogurt, milk, and vanilla extract until just combined.
- Add green gel food coloring and mix until the batter is a beautiful, even green.
- Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners and fill each about 2/3 full.
- Bake for 16–19 minutes or until a toothpick inserted in the center comes out clean.
- Beat softened butter until creamy for frosting. Gradually add powdered sugar, Kool-Aid powder, and pink gel food coloring.
- Add milk one tablespoon at a time until smooth, pipeable consistency is reached.
- Let cupcakes cool completely before frosting. Pipe pink frosting atop each cupcake.
- Sprinkle mini chocolate chips for “watermelon seeds” if desired.
Notes
Use room-temperature ingredients for best texture. Don’t overmix batter to keep cupcakes fluffy. Check doneness with a toothpick after 16 minutes. If frosting is too stiff, add milk; if too runny, add powdered sugar. Use a piping bag with star tip for pretty frosting swirls.
