This fresh peach cobbler is the ultimate easy summer dessert—juicy peaches baked under a golden cinnamon-sugar topping. Cozy, comforting, and irresistibly delicious!


Ingredients

Filling:

8 large fresh peaches, peeled, pitted, and sliced

⅓ cup organic brown sugar

⅓ cup organic white sugar

1 tsp lemon juice

2 tsp corn starch

½ tsp cinnamon

¼ tsp nutmeg

Topping:

1½ cups all-purpose flour

⅓ cup organic brown sugar

⅓ cup organic white sugar

1½ tsp baking powder

½ tsp salt

½ cup (1 stick) Earth Balance® vegan butter, cold and cut into small pieces

⅓ cup boiling water

Additional Topping:

4 tsp organic sugar

1½ tsp cinnamon


Instructions

1. Preheat oven to 425°F.

2. In a large bowl, combine peaches with brown sugar, white sugar, lemon juice, corn starch, cinnamon, and nutmeg.

3. Transfer peach mixture into an ungreased 9×13 baking dish.

4. Bake for 10 minutes.

5. While peaches bake, whisk flour, sugars, baking powder, and salt.

6. Cut in cold vegan butter until crumbly.

7. Add boiling water and stir until combined into a thick batter.

8. Spoon batter over peaches and gently spread.

9. Mix cinnamon and sugar for topping and sprinkle over cobbler.

10. Bake an additional 35 minutes until golden brown and bubbling.

11. Cool for 10–15 minutes before serving. Serve warm with ice cream.

Notes

Can be made with canned or frozen peaches—just drain well and reduce sugar.

Use gluten-free flour if needed.

Store leftovers in the fridge for up to 3 days.

Reheat in oven or microwave until warmed through.

Great with dairy-free vanilla ice cream or whipped topping.
