Description
A sweet and spicy summer salsa made with fresh peaches, tomatoes, jalapeno, and lime juice. Perfect with chips, tacos, or grilled meats.
Ingredients
1 pound (450g) fresh ripe peaches, diced
1 large Roma tomato, diced
¼ cup (30g) red onion, diced
½ jalapeno, minced (seeds and membrane removed)
2 tablespoons cilantro, minced
Juice from 1 lime
Salt and pepper to taste
Instructions
1. Dice peaches, tomato, and red onion.
2. Mince jalapeno and cilantro.
3. Juice the lime.
4. Combine all ingredients in a large bowl.
5. Toss gently to mix.
6. Season with salt and pepper to taste.
7. Serve immediately or chill for 30 minutes before serving.
Notes
For more heat, leave the jalapeno seeds and ribs in or use habanero.
Best peaches are ripe but not mushy, with a sweet smell and vibrant color.
Store in an airtight container in the fridge for up to 4 days.
