Ingredients
1 cup plain Greek yogurt preferably whole milk
1/3 cup creamy peanut butter
2 tablespoons honey or maple syrup optional
1 teaspoon vanilla extract
Pinch of salt
1/4 cup mini chocolate chips optional
1 tablespoon chopped peanuts or crushed pretzels optional
1/2 teaspoon cinnamon optional
1 tablespoon cocoa powder optional
Instructions
1. Line a baking sheet or shallow tray with parchment paper to prevent sticking.
2. In a medium bowl mix Greek yogurt peanut butter honey or maple syrup vanilla extract and salt until the mixture becomes smooth and evenly blended.
3. If using optional ingredients such as chocolate chips chopped peanuts or cocoa powder fold them into the mixture.
4. Scoop about one tablespoon of the mixture and drop small mounds onto the lined tray spacing them slightly apart.
5. Place the tray in the freezer and freeze for about 1 to 2 hours or until the bites become firm.
6. Once frozen solid transfer the bites to a freezer safe container or zip top bag for storage.
7. Before eating let the bites sit at room temperature for about 2 to 3 minutes so they soften slightly.
Notes
Use thick Greek yogurt for the best texture because thinner yogurt may turn icy after freezing.
Natural peanut butter with minimal oil separation provides the best flavor and consistency.
If the mixture feels too thin mix in a little more Greek yogurt or add small amounts of oats or cocoa powder to thicken it.
Let the bites rest briefly after removing from the freezer for the best texture and flavor.
