Ingredients
3/4 cup rolled oats
1/2 teaspoon cinnamon
1/4 cup almond butter
3 to 4 tablespoons honey
1 teaspoon vanilla extract
1 cup Greek yogurt
Fresh berries such as strawberries, blueberries, or raspberries
Optional toppings such as chocolate chips, shredded coconut, or nut butter drizzle
Instructions
1. Combine rolled oats and cinnamon in a mixing bowl.
2. Add almond butter, honey, and vanilla extract, then mix until the oats are evenly coated and sticky.
3. Press the mixture firmly into the bottom and sides of a lined muffin tin to form cup shapes.
4. Place the muffin tray in the freezer for about 10 minutes so the granola base firms up.
5. Stir the Greek yogurt until smooth.
6. Spoon the yogurt evenly into each granola cup.
7. Add fresh berries or other preferred toppings.
8. Freeze the cups until completely solid, about 1 to 2 hours.
9. Remove the frozen cups from the muffin pan and store in an airtight container in the freezer.
10. Let them sit at room temperature for a few minutes before serving so they soften slightly.
Notes
Press the oat mixture firmly so the cups hold their shape after freezing.
If the mixture feels dry, add a little extra honey or nut butter.
Use thick Greek yogurt for the creamiest frozen texture.
