Funfetti Cake Cookies for Easter are soft, fluffy, colorful cookies made with a simple cake mix base and festive pastel candy mix-ins. Perfect for Easter brunch, spring parties, or baking with kids.
Ingredients
1 box Funfetti cake mix
1/3 cup vegetable oil
2 large eggs
1/2 cup M&M’s candies
1/2 cup white chocolate chips
2 tablespoons nonpareil sprinkles
Instructions
1. Preheat oven to 350°F (177°C) and line a baking sheet with parchment paper.
2. In a large bowl, mix the Funfetti cake mix, vegetable oil, and eggs until a thick sticky dough forms.
3. Stir in the M&M’s candies, white chocolate chips, and sprinkles until evenly combined.
4. Scoop dough onto the prepared baking sheet, spacing each portion about 2 inches apart.
5. Press extra candies or white chocolate chips on top if desired.
6. Bake for 8 to 9 minutes until the edges are set but centers remain soft.
7. Allow cookies to cool on the baking sheet for several minutes before transferring to a wire rack.
Notes
The dough will be thick and sticky. Using a hand mixer or cookie scoop makes handling easier.
Do not overbake. A short bake time keeps the centers soft and fluffy.
Spacing the dough prevents cookies from spreading into each other.
Adding extra mix-ins on top before baking improves appearance and texture.
