Ingredients

2 lbs steak such as filet, ribeye, or sirloin

45 tbsp avocado oil

5 tbsp butter divided

10 cloves garlic minced and divided

1.5 cups heavy cream

2 green onions diced

1 tsp red pepper flakes

2/3 cup parmesan cheese grated

4 lbs russet potatoes

1 cup half and half warmed

6 tbsp salted butter for potatoes

3/4 cup shredded cheese

1 tsp garlic powder

3/4 tsp salt

Black pepper to taste

2 tbsp smoked paprika

1 tbsp cayenne pepper

1 tbsp onion powder

2 tsp garlic powder (for seasoning)

1 tsp black pepper

1 tsp salt (for seasoning)

1/2 tsp dried thyme

1/2 tsp dried oregano


Instructions

1. Cut steak into bite sized pieces, coat with oil, and season well. Let sit briefly at room temperature

2. Peel and cut potatoes, soak in cold water, then boil in salted water until tender

3. Heat oil in a pan and sear steak in batches until browned, flipping once, then remove

4. In the same pan, melt butter and cook garlic until fragrant, return steak and toss to coat, then set aside

5. Add more butter and garlic, whisk in cream, and simmer gently until slightly thickened

6. Mash potatoes with butter, half and half, cheese, and seasonings until smooth

7. Stir parmesan, red pepper flakes, and green onions into the sauce until creamy

8. Serve steak bites over mashed potatoes and spoon sauce on top
