Creamy, garlicky, and golden—this Garlic Butter Sweet Potato Bake is a comforting side dish perfect for both weeknights and holidays.
Ingredients
1 tsp cornstarch
1 1/2 cups heavy cream
1/2 cup (1 stick) butter
5 cloves garlic, finely minced
1 tbsp chopped fresh thyme
Kosher salt, to taste
Freshly cracked black pepper, to taste
3 lb sweet potatoes, peeled and sliced into 1/8-inch thick rounds
1/3 cup fresh parmesan cheese, grated
Instructions
1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with butter or nonstick spray.
2. In a saucepan over medium-low heat, whisk cornstarch into heavy cream. Add butter, garlic, thyme, salt, and pepper. Stir frequently until butter melts and mixture is hot but not boiling. Remove from heat and let sit briefly.
3. Layer sweet potato slices evenly in the baking dish. Pour the warm garlic cream mixture over the potatoes, covering them fully.
4. Bake uncovered for 30 minutes.
5. Remove from oven, sprinkle parmesan cheese evenly on top, then return to oven and bake another 10 minutes, or until the cheese is golden and bubbly. Optional: broil 1–2 minutes for a crispier top.
6. Let rest for 10 minutes before serving to allow the sauce to thicken.
Notes
Use thin, uniform slices of sweet potato (1/8 inch) to ensure even cooking.
Season between layers for better overall flavor.
Avoid high heat when making the cream sauce to prevent burning the garlic.
Cover the dish during the first part of baking to help the potatoes cook evenly.
