Description
A moist, flavorful gluten-free apple cake made with wholesome ingredients and topped with a sweet cinnamon sugar layer.
Ingredients
1 cup unsweetened applesauce
2 large eggs
1/2 cup pure maple syrup
1/4 cup avocado oil (or any neutral oil)
1 tsp vanilla extract
1 1/2 cups almond flour
1/2 cup tapioca flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1 medium apple (peeled and finely diced)
Topping:
1 tbsp coconut sugar
1/2 tsp cinnamon
Instructions
1. Preheat oven to 350°F (175°C) and grease or line an 8×8 inch baking pan.
2. In a large bowl, whisk together applesauce, eggs, maple syrup, oil, and vanilla extract.
3. Add almond flour, tapioca flour, baking soda, cinnamon, and salt; mix until just combined.
4. Fold in the diced apple.
5. Pour batter into the prepared pan and smooth the top.
6. In a small bowl, mix coconut sugar and cinnamon; sprinkle over the top of the batter.
7. Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean.
8. Let cool in the pan before slicing and serving.
Notes
Store leftovers in an airtight container at room temperature for up to 2 days or in the fridge for up to 5 days.
Cake can also be frozen for up to 2 months.
You can swap coconut sugar in the topping for brown sugar if preferred.
Best enjoyed within a couple of days for peak texture and flavor.
