Description

Baked ground turkey meatballs with feta, garlic, and Mediterranean herbs, served with homemade tzatziki sauce for a quick, healthy meal.


Ingredients

Scale

1 lb ground turkey (93% lean, 7% fat)

¼ cup panko breadcrumbs (or regular breadcrumbs)

¼ cup red onion, chopped finely

¼ cup feta cheese (block, crumbled)

3 garlic cloves, minced

1 egg

2 tsp dried oregano

1 tsp dried dill

½ tsp cumin

½ tsp salt

¼ tsp black pepper

1 cup plain Greek yogurt

2 Persian cucumbers, grated

1 Tbsp fresh dill (or 1 tsp dried dill)

2 garlic cloves, minced

2 Tbsp lemon juice

1 Tbsp olive oil

½ tsp salt

Cracked black pepper to taste


Instructions

1. Wrap grated cucumber in paper towels or cheese cloth, wring out liquid.

2. Add cucumber and remaining tzatziki ingredients to bowl, mix until combined.

3. Adjust seasoning, cover, and refrigerate.

4. Preheat oven to 400°F, line baking sheet with parchment paper or spray baking dish.

5. Combine meatball ingredients in large bowl, mix by hand.

6. Form 1-inch balls, place on prepared sheet.

7. Bake 15-20 minutes (or brown in sauté pan first, then bake ~13-15 minutes).

8. Serve with tzatziki sauce and lemon wedges.

Notes

Browning meatballs before baking adds color and flavor.

Can substitute ground chicken for turkey.

Panko gives lighter texture; regular breadcrumbs make denser meatballs.

Use block feta for better flavor.

Great for meal prep with rice, chopped tomatoes, cucumber, and tzatziki on the side.
