Ingredients
3/4 cup balsamic vinegar
1/4 cup honey
3 cloves garlic, minced
2 tablespoons olive oil
2 teaspoons Italian seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
4 boneless skinless chicken breasts
4 slices mozzarella cheese
2 avocados, diced
3 Roma tomatoes, diced
1/4 cup fresh chopped basil
Salt and pepper to taste
Optional: balsamic vinegar for drizzling
Instructions
1. Whisk together balsamic vinegar, honey, garlic, olive oil, Italian seasoning, salt, and pepper.
2. Add chicken breasts and coat fully; marinate for 30 minutes.
3. In a separate bowl, mix avocado, tomato, basil, salt, and pepper; set aside.
4. Preheat grill to medium-high heat.
5. Grill chicken ~6 minutes per side or until internal temp reaches 165°F.
6. Top grilled chicken with mozzarella cheese, then spoon avocado-tomato mixture on top.
7. Drizzle with extra balsamic vinegar before serving.
Notes
• Use ripe but firm avocados to prevent mushy texture.
• Pound thicker chicken breasts for even grilling.
• Let the chicken rest before topping to keep juices in.
• Optional: bake at 350°F for 45 minutes if not grilling.
