Description
Smoky, caramelized grilled sweet potatoes paired with a cool herby yogurt dressing. This easy summer side is flavorful, nutritious, and comes together fast for any cookout or weeknight dinner.
Ingredients
3–4 medium sweet potatoes, scrubbed
2 tablespoons olive oil
1 teaspoon kosher salt
½ teaspoon freshly cracked black pepper
Optional: pinch of smoked paprika or chili powder
**Herby Yogurt Dressing (optional)**
¾ cup plain Greek yogurt (whole milk preferred)
1 tablespoon lemon juice
1 tablespoon olive oil
1 clove garlic, finely grated or minced
2 tablespoons chopped fresh herbs (like dill, parsley, or chives)
Salt and pepper to taste
Instructions
1. Slice sweet potatoes into thick wedges (about ½ inch thick). Keep size uniform for even cooking.
2. Optional: Boil wedges in salted water for 5–6 minutes until slightly tender. Drain and pat dry.
3. Toss wedges with olive oil, salt, pepper, and any optional spices.
4. Preheat grill to medium-high. Place sweet potatoes directly on grill grates.
5. Grill 3–4 minutes per side, flipping once, until grill marks appear and potatoes are tender.
6. While grilling, stir together all yogurt dressing ingredients in a small bowl. Taste and adjust seasoning.
7. Serve grilled sweet potatoes warm, with herby yogurt sauce spooned over or on the side.
Notes
No need to peel the sweet potatoes—just scrub them well.
You can skip boiling if your wedges are thinner or you’re short on time.
Try mint or cilantro in the dressing for a twist.
Store leftovers in an airtight container for up to 3 days. Reheat on a grill pan or in the oven.
