Ingredients
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup vegan butter, softened
1 cup granulated sugar
1/4 cup unsweetened applesauce
1 teaspoon vanilla extract
1 tablespoon green food coloring
1/4 cup powdered sugar (for rolling)
Instructions
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. Mix flour, baking powder, and salt in one bowl.
3. In another bowl, cream vegan butter and sugar until fluffy.
4. Add applesauce, vanilla, and green food coloring; mix well.
5. Gradually stir dry mixture into wet until dough forms.
6. Chill dough in the refrigerator for 30 minutes.
7. Roll tablespoon portions into balls and coat in powdered sugar.
8. Place on baking sheet and bake 10–12 minutes until cracked.
9. Cool completely on a wire rack before serving or storing.
