Description

Festive Grinch Mini Cheesecakes with a neon-green filling and Oreo crust. Easy to make, creamy, and perfect for holiday parties. Ready in just 40 minutes and makes 12 adorable mini cheesecakes.


Ingredients

Crust:

1 cup Oreo crumbs

2½ tablespoons melted butter

Cheesecake Filling:

2 (8 oz) packages cream cheese, softened

½ cup sugar

2 eggs

1 teaspoon vanilla extract

Neon green food coloring (add gradually to desired color)


Instructions

1. Preheat oven to 350°F and place liners in a cupcake pan.

2. Crush 10–11 Oreos into fine crumbs and mix with melted butter.

3. Distribute crumb mixture evenly into liners and press firmly to form crusts.

4. Beat softened cream cheese and sugar together until smooth.

5. Add eggs and vanilla, mixing until well incorporated (avoid overmixing).

6. Stir in neon green food coloring until the desired shade is reached.

7. Fill each liner with about ¼ cup of cheesecake mixture.

8. Bake for 15–17 minutes, until centers are slightly jiggly.

9. Cool completely in the pan, then refrigerate until firm.

10. Top with whipped cream and festive sprinkles before serving.

Notes

Let cheesecakes cool fully before refrigerating to prevent cracks.

Can be made a day ahead and stored in the fridge.

Best served chilled with whipped cream and crushed candy for decoration.
