Description

Soft, juicy, and perfectly mild, these Ground Chicken Meatballs for Kids come together fast for busy weeknights. Tender from milk-soaked panko and Parmesan, they bake up golden and gentle enough for little appetites.


Ingredients

2 tbsp extra virgin olive oil

Cooking spray

1 lb ground chicken

1/2 cup grated Parmesan cheese

1 tsp kosher salt

1/4 cup milk

1/2 cup panko breadcrumbs

1/2 tsp garlic powder

1 large egg


Instructions

1. Preheat oven to 400°F (200°C), line a baking sheet with parchment paper, and spray lightly with cooking spray.

2. In a bowl, combine panko, milk, salt, garlic powder, egg, and olive oil; let sit to absorb.

3. Add ground chicken and Parmesan cheese; mix gently until uniform.

4. Form into even meatballs with slightly damp hands.

5. Arrange on baking sheet and lightly spray tops with cooking spray.

6. Bake for 20 minutes, then optionally broil for 2–3 minutes until lightly golden.

Notes

Ground turkey can be used instead of chicken.

Panko can be replaced with regular or gluten-free breadcrumbs.

Milk can be swapped for unsweetened plant-based milk.

Oil or wet hands before shaping to prevent sticking.

Omit Parmesan for dairy-sensitive kids.
