2 cups + 2 Tbsp bread flour (11 oz / 312g)
1-1/8 tsp instant yeast
3/4 tsp salt
1 Tbsp olive oil
3/4 cup filtered water (6 oz / 177ml)
**Pizza Sauce**
16 oz tomato sauce
6 oz tomato paste
2 garlic cloves, minced
1.5 tsp dried oregano
1.5 tsp dried basil
1 tsp sugar
1/2 tsp onion salt
1/4 tsp salt
**Ghost Toppings**
6 slices mozzarella cheese (4 oz / 113g)
1 Tbsp sliced black olives
**Assembly**
8 oz prepared dough (room temp)
1.5 Tbsp olive oil (for skillet)
1/3 cup pizza sauce
1/4 cup grated Parmesan (0.75 oz / 22g)
1.5 cups shredded mozzarella (6 oz / 170g)
1 tsp olive oil (for drizzling)
Instructions
1. Combine flour, yeast, and salt in food processor. Pulse to mix.
2. Add olive oil and water. Process 30–40 sec until rough dough ball forms.
3. Let dough rest 2 minutes, then process again 30 sec.
4. Knead dough on floured surface until smooth. Place in oiled bowl, cover, and let rise 1.5 hours.
5. Blend all pizza sauce ingredients until smooth. Refrigerate until ready to use.
6. Cut ghost shapes from mozzarella slices using cookie cutters.
7. Use round piping tips to cut eyes and mouths from black olive slices.
8. Place shaped cheese ghosts on parchment paper until needed.
9. Preheat oven to 450°F.
10. Roll out 8 oz dough into 11-inch circle. Place in greased 12-inch cast iron skillet.
11. Spread 1/3 cup pizza sauce on dough, leaving 1/2-inch border. Sprinkle Parmesan and mozzarella on top.
12. Cook skillet on stove (med heat) for 5 minutes until edges begin to set.
13. Transfer skillet to oven and bake 8–10 minutes until golden and bubbly.
14. Remove from oven and immediately add cheese ghosts with olive faces.
15. Drizzle with olive oil, slice, and serve hot.
Notes
The dough recipe makes enough for two pizzas — use half now, and refrigerate or freeze the rest.
You can use store-bought dough and sauce to save time.
Add ghost cheese toppings after baking so they melt gently and hold their shape.
Use a mix of large and small ghost cutters for variety.
Pizza sauce can be stored in fridge for 1 week or freezer for 1 month.
