Description
Rich, fudgy brownies stuffed with homemade salted caramel sauce and topped with a spooky edible marshmallow spiderweb, perfect for Halloween.
Ingredients
**For the Brownies**
150g unsalted butter, chopped
150g dark chocolate (70% cocoa solids)
2 large eggs, room temperature
220g white caster sugar
150g self-raising flour
**For the Salted Caramel Sauce**
100g granulated sugar
40g unsalted butter, room temperature, chopped
100g double cream, room temperature
0.5 tsp salt
**For the Spiderweb Decoration**
100g white marshmallows
Edible eyes (optional)
Instructions
1. Melt sugar in saucepan over medium-low heat (stir continuously on gas, do not stir on induction).
2. Once amber, remove from heat, whisk in butter, then cream, then salt.
3. Refrigerate 1–2 hours until thick.
4. Preheat oven to 180°C (fan).
5. Line 8×8 tin with baking paper.
6. Melt butter and chocolate in microwave, stir until smooth.
7. Whisk eggs and sugar until frothy, mix in melted chocolate and flour.
8. Spread half the brownie mix into tin.
9. Spoon caramel over, avoiding edges.
10. Cover with remaining brownie mix.
11. Bake 18–20 mins until top is set and edges cracked.
12. Cool fully in tin (minimum 4 hours or refrigerate for 2).
13. Melt marshmallows in microwave 20–30 secs.
14. Use fingers to pull into web strands, drape over brownies.
15. Add edible eyes for effect.
