Description
A hearty and comforting hamburger soup made with ground beef, potatoes, vegetables, and a rich tomato-based broth. Quick, simple, and perfect for any night of the week.
Ingredients
1 lb ground beef
1 small onion, finely diced
2 cloves garlic
1 teaspoon salt
2 cups peeled and chopped Yukon gold potatoes (½-inch pieces)
2 cans (14.5 oz each) beef broth
1 can (10 oz) condensed tomato soup
1 can (15 oz) petite diced tomatoes, undrained
1 bag (16 oz) frozen mixed vegetables (carrots, peas, corn, green beans)
1 teaspoon Worcestershire sauce
1 teaspoon dried parsley
½ teaspoon dried basil
Instructions
1. In a large soup pot over medium-high heat, cook the ground beef with onion, garlic, and salt until browned, breaking it into crumbles. Drain excess grease.
2. Add potatoes, beef broth, tomato soup, diced tomatoes, mixed vegetables, Worcestershire sauce, parsley, and basil. Stir to combine.
3. Bring to a boil, then reduce heat to medium-low. Cover and simmer for 30 minutes until potatoes are tender.
4. Taste, adjust salt if needed, and serve hot with bread rolls or salad.
Notes
Use regular beef broth for the richest flavor; add more salt if using low-sodium broth.
Chop potatoes into ½-inch pieces for even cooking.
Simmering the full 30 minutes deepens the flavor.
Store in the refrigerator for 4–5 days or freeze for up to 3 months.
