Ingredients

2 cups whole milk

3 whole cloves

1 teaspoon ground cinnamon (plus extra for garnish if desired)

½ teaspoon ground nutmeg

6 large egg yolks

1 cup granulated sugar

2 cups heavy cream

1 teaspoon vanilla extract

1¼ cups spiced rum or bourbon (optional)


Instructions

1. Heat milk with cloves, cinnamon, and nutmeg in a saucepan until just boiling.

2. In a separate bowl, whisk egg yolks and sugar until light and fluffy.

3. Gradually add a small amount of the hot milk to the yolks while whisking constantly.

4. Slowly mix in the remaining milk.

5. Return the mixture to the stove and cook over medium heat, stirring, until slightly thickened.

6. Remove from heat and strain out the cloves.

7. Let cool for one hour, then stir in cream, vanilla, and optional rum.

8. Chill for several hours or overnight before serving.
