Ingredients

1 lb boneless, skinless chicken thighs or breasts

1 cup long-grain rice

2 cups chicken broth

1/2 cup BBQ sauce

1/4 cup honey

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 cup mixed vegetables (fresh or frozen)

Optional garnish: chopped green onions or parsley


Instructions

1. Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.

2. Sear chicken in a skillet over medium heat for 3–4 minutes per side until browned, then remove from pan.

3. In the same pan, toast the uncooked rice for 1–2 minutes for a nutty flavor.

4. Stir in chicken broth, BBQ sauce, and honey; bring to a light boil.

5. Return chicken to the pan, nestling it into the rice mixture.

6. Cover and simmer on low for 15 minutes.

7. Add vegetables on top, cover again, and cook for another 5 minutes until rice is tender and chicken is fully cooked (165°F/74°C).

8. Remove from heat, rest for 5 minutes, fluff rice with a fork.

9. Garnish with green onions or parsley and serve hot.
