A hearty and flavorful Irish beef stew made effortlessly in a slow cooker. Perfect for cozy dinners, meal prep, and cold weather comfort food.
Ingredients

- 2 lbs beef chuck roast, cut into 1–2 inch cubes
- 2 tbsp flour
- Salt and pepper, to taste
- 2 tbsp oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 celery stalks, chopped
- 1 lb baby potatoes, halved
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 cup Guinness beer (or extra beef broth)
- 4 cups beef broth
- 1 bay leaf
- 1 tsp thyme
- 1 tsp rosemary
- 2 tbsp cornstarch mixed with 2 tbsp water (optional for thickening)
- Fresh parsley, for garnish
Instructions
- Season beef with salt, pepper, and flour.
- Heat oil in a skillet and sear beef on all sides until golden brown.
- Transfer beef to the slow cooker.
- In the same skillet, sauté onions until soft, then add garlic and cook for 1 minute.
- Stir in tomato paste and Worcestershire sauce, cooking for another minute.
- Deglaze the skillet with Guinness beer or beef broth, scraping up browned bits.
- Transfer mixture to the slow cooker.
- Add carrots, celery, and potatoes.
- Pour in beef broth and add bay leaf, thyme, and rosemary.
- Cover and cook on low for 7-8 hours or high for 4 hours.
- During the last 30 minutes, mix cornstarch with water and stir into the stew for thickening.
- Season to taste, garnish with fresh parsley, and serve hot.
Notes
Leftovers taste even better the next day. Store in an airtight container in the fridge for up to 4 days or freeze for 3 months.
