Description
Iced strawberry sugar cookies are soft, chewy, and full of real strawberry flavor made with freeze dried strawberries. Each cookie gets topped with a creamy, slightly tangy strawberry cream cheese icing that makes them perfect for any occasion.
Ingredients
2 1/4 cups all-purpose flour
1/2 cup freeze dried strawberry powder (plus extra for icing)
1 teaspoon baking soda
1/2 teaspoon salt
1 cup unsalted butter, softened
1 1/4 cups granulated sugar
1 teaspoon vanilla extract
1 large egg
1 large egg yolk
2 ounces cream cheese
1/2 cup powdered sugar
1 to 2 tablespoons milk
Instructions
1. Finely grind freeze dried strawberries into powder if needed, then mix with flour, baking soda, and salt
2. Beat butter, sugar, and vanilla until light and fluffy
3. Add egg and egg yolk, then mix until smooth
4. Combine dry ingredients with wet mixture to form a thick dough
5. Scoop dough into balls and place on a lined tray
6. Chill dough for 30 to 60 minutes until firm
7. Bake until set and lightly golden, then cool completely
8. Mix cream cheese, powdered sugar, strawberry powder, and milk to make icing
9. Dip cooled cookies into icing and let excess drip off
10. Sprinkle extra strawberry powder on top if desired and let icing set
