Description
Soft, colorful Jello Cookies with a chewy center and sparkling sugar crust. These bright Easter cookies use flavored gelatin to create fun colors and fruity flavor while baking in under 30 minutes.
Ingredients
1 (17.5 ounce) snickerdoodle cookie mix (do not use the cinnamon-sugar packet)
½ cup (1 stick) salted butter, melted
1 large egg
3 tablespoons red gelatin powder
3 tablespoons blue gelatin powder
3 tablespoons green gelatin powder
3 tablespoons yellow gelatin powder
1 cup granulated sugar for rolling
Instructions
1. Preheat oven to 350°F and line a baking sheet with parchment paper or a silicone baking mat.
2. Combine the cookie mix, melted butter, and egg in a large bowl and stir until a soft dough forms.
3. Divide the dough evenly into four separate bowls.
4. Add a different gelatin flavor to each portion and knead until the color and flavor blend evenly into the dough.
5. Place granulated sugar in a shallow bowl.
6. Scoop about 2 tablespoons of dough and roll into balls.
7. Roll each dough ball in sugar until fully coated.
8. Place the dough balls on the prepared baking sheet about 2 inches apart.
9. Bake for 10 to 13 minutes until the tops look set and the bottoms are lightly golden.
10. Allow cookies to cool on the baking sheet for several minutes.
11. Transfer to a wire rack and cool completely before serving.
Notes
Store cookies in an airtight container at room temperature for 3 to 5 days.
To freeze cookies, allow them to cool completely and store in an airtight container for up to 6 months.
Thaw frozen cookies at room temperature before serving.
Sugar free gelatin can be used as a substitute.
For stronger flavor, roll dough balls in a little extra dry gelatin before baking.
Chilling the dough allows it to be rolled and cut into shapes if desired.
