Description
Sweet, tender, keto-friendly peach cobbler muffins packed with fresh peaches and a crumbly streusel topping.
Ingredients
1/2 cup (115 g) sour cream
3 large eggs
1 tsp vanilla extract
1/2 tsp peach extract (optional)
2 1/4 cups (235 g) almond flour
1/2 cup (91 g) Swerve Granular
1/3 cup (36 g) whey protein powder or egg white protein powder
2 tsp baking powder
1/4 tsp salt
2 cups (308 g) finely chopped peaches (about 2 medium peaches)
For Streusel Topping:
Almond flour
Swerve Brown
Melted butter
Instructions
1. Preheat oven to 350F and line 16 muffin cups with liners.
2. Peel and chop peaches; reserve 1/2 cup for topping.
3. Mix streusel topping ingredients until crumbly.
4. Whisk sour cream, eggs, vanilla, and peach extract until smooth.
5. Stir in almond flour, Swerve Granular, protein powder, baking powder, and salt until combined.
6. Fold in 1 1/2 cups peaches.
7. Spoon batter into muffin cups 3/4 full.
8. Top each muffin with reserved peaches and streusel.
9. Bake 23-28 minutes until golden and firm.
10. Cool completely before serving.
Notes
You can substitute berries for peaches to lower carbs.
Do not substitute coconut flour for almond flour.
Protein powder helps create a fluffier texture.
