Description
A quick, no-bake Lazy Ice Cream Sandwich Cake with layers of ice cream sandwiches, whipped cream, caramel, and fudge. Perfect for parties or last-minute desserts.
Ingredients
12 vanilla ice cream sandwiches (or preferred flavor)
8 oz container whipped topping (Cool Whip or similar)
½ of a 15 oz bottle hot fudge ice cream topping, warmed if needed
½ of a 15 oz jar caramel ice cream topping, warmed if needed
Handful of roasted salted peanuts (optional)
Instructions
1. Line 8×8 pan with double layer cling wrap, leaving overhang.
2. Arrange 6 ice cream sandwiches in bottom layer.
3. Spread half whipped cream over sandwiches.
4. Drizzle thin layer of caramel and fudge sauce (about 4 tbsp each) OR spread fudge first, then whipped cream, then caramel.
5. Add second layer of sandwiches.
6. Spread remaining whipped cream on top.
7. Make alternate lines of caramel and fudge, drag toothpick for design.
8. Freeze until firm.
9. Before serving, optionally sprinkle peanuts and drizzle extra caramel and fudge.
Notes
Chocolate-flavored sauce can replace or be combined with hot fudge sauce.
One 12 oz bottle each of caramel and chocolate fudge is enough for both 8×8 and 9×13 versions.
For 9×13 version, double whipped cream, ice cream sandwiches, and peanuts (if using).
