Description
Juicy lemon chicken coated in parmesan crust and simmered in buttery lemon garlic sauce. Ready in 30 minutes with simple ingredients.
Ingredients
1½ lb chicken breasts (2 large), patted dry
1 tbsp olive oil (for sautéing)
1 tbsp parsley, chopped (optional garnish)
½ lemon, sliced (optional garnish)
2 large eggs
1 garlic clove, minced
½ tsp Italian seasoning
½ tsp salt
¼ tsp ground black pepper
1 cup grated Parmesan cheese
3 tbsp all-purpose flour
8 tbsp unsalted butter
2 garlic cloves, minced
¼ cup lemon juice
¼ cup chicken broth
¼ tsp ground black pepper
Instructions
1. Slice chicken breasts in half lengthwise and flatten evenly.
2. In one bowl, whisk eggs with garlic, Italian seasoning, salt, and pepper.
3. In another bowl, mix Parmesan cheese and flour.
4. Dip chicken in the egg mixture, then coat in Parmesan mixture.
5. Heat olive oil in a skillet over medium heat.
6. Cook chicken 4–5 minutes on each side until golden and fully cooked.
7. Melt butter in another pan and sauté garlic until fragrant.
8. Add lemon juice, broth, and pepper. Simmer for 2 minutes.
9. Pour sauce over chicken and turn to coat.
10. Garnish with lemon slices and parsley before serving.
Notes
Reduce lemon juice if you prefer a milder flavor.
Marinate chicken in egg mixture ahead of time for convenience.
Skip breading for a lighter version.
